Earlier today, I asked Bill which one he was in the mood for. He was completely confused that I was asking that! The truth is, I usually only "cook" once or twice a week. The rest of the time, we eat frozen pizza, pot pies or we go out to eat. This routine started when our youngest moved out. I have been on a 5 year break! So anyway, back to Bill. He said he was in the mood for the tenderloin.
Here is what the weekly menu looks like.
The recipe was very east to follow. It said it would take 10 minutes to prep and 20 minutes to cook. I think their estimate was pretty close.
I gathered the ingredients for the sauce that the tenderloin was basted with. It was quick and easy to mix up.
The next step was to put the tenderloin in a pan, add salt and pepper and then baste it with the apricot mixture.
It cooked for 25 minutes and I basted it a couple of times. The eMeals menu includes a side dish. I guess it was a good thing that they did not have baby beets at the store last night. I told Bill that I was going to make the side they suggested but couldn't get all the ingredients. He asked what I was missing and after I told him, he very emphatically said that he does not like beets! Guess I will scratch that side off the list. We had scalloped potatoes instead. I am afraid it was the kind that comes from a box too! The Pioneer Woman does not need to worry about me being competition in her cooking expertise yet! Here is the finished tenderloin. Well, half of it. The other half is still in the oven. It kind of split in 2 and so we ate the smaller half first.
It was nice and hot. See the steam rising? This was a recipe I would make again. Bill said he liked it too, but he is not as picky of an eater as I am.
